New fine dining restaurant opens in Warwick

A new fine dining restaurant has opened in the centre of Warwick, aiming to offer an "accessible and enjoyable" experience for guests.

Hem opened its doors in Market Place earlier this month, in the former home of long established local eatery Tailors, where new owner Sebastian Hargreaves had worked as front of house manager.

Dan Cavell, one of the previous owners of Tailors, has come on board as the chef at the new restaurant and says he is delighted to be bringing his food back to the town after a short hiatus.

"It is amazing to be back in Warwick," he told Nub News. 

"I have been in Warwick for 16 years and we had built up a steady flow of regular customers. 

"We were in all the guides which is what we were working towards, and Seb was working with us right up until last year. 

"So he and I are really on the same page here. And it is so nice to come back. 

"Although I haven't been here for six or seven months, coming back to the kitchen does feel like coming home and where I belong."

The restaurant has two menus - one meat and one vegetarian - and will slowly replace dishes on a gradual basis as the year goes on.

"Everything is locally sourced, seasonal produce," Dan explained.

"What we want to do is to produce great food, offer value for money, and make sure people enjoy their experience with us."

Since taking over the lease at the end of last year, the restaurant has had a full makeover with the front repainted, and new décor installed inside.

Seb has gone for a contemporary, minimalist style, which they hope will be reflected in the "stripped back" food.

And with space for just 18 covers, the restaurant hopes to provide a comfortable, intimate setting.

"We want to offer something that is really accessible in a setting that is really welcoming," Dan explained. 

"The food and service are forefront, but the customers having an all round memorable experience is more important."

The new eatery has also taken inspiration from the past, with the name 'Hem' a nod to the building's history as a men's tailors.

And while the focus now is on getting the restaurant up and running, Dan said he is "super hungry" to earn a Michelin Star, and establish a destination eatery in the town.
